Crust
- 1.5 cups Graham Cracker Crumbs
- 0.25 cup Sugar
- 0.5 cup Butter, melted
Filling
- 24 oz Cream Cheese, softened
- 1 cup Sugar
- 1 cup Sour Cream
- 0.75 cup Key Lime Juice
- 1 tablespoon Key Lime Zest
- 3 large Eggs
Preheat oven to 325°F (163°C).
Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press mixture into the bottom of a springform pan.
In a large bowl, beat cream cheese and sugar until smooth. Add sour cream, key lime juice, and zest. Mix well.
Add eggs one at a time, beating after each addition until just combined.
Pour filling over crust. Bake for 60 minutes or until center is set.
Let cheesecake cool to room temperature, then refrigerate for at least 4 hours before serving.
