Ingredients 

Main Ingredients

  • 8 eggs
  • ½ cup heavy cream
  • 1 cup shredded cheese cheddar or your choice
  • 1 bell pepper diced
  • 1 small onion diced
  • 1 cup spinach chopped
  • 2 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
  3. Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper, and cook until softened.
  4. Add the chopped spinach to the skillet and cook until wilted.
  5. Pour the egg mixture into the skillet and stir to combine with the vegetables. Sprinkle the shredded cheese on top.
  6. Transfer the skillet to the preheated oven and bake for 20 minutes, or until the frittata is set and golden on top.
  7. Remove from the oven and let cool slightly before slicing and serving.
