Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 bunch kale chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • ¼ cup red onion finely chopped
  • ¼ cup feta cheese crumbled
  • ¼ cup olive oil
  • 2 tablespoon lemon juice freshly squeezed
  • 1 teaspoon salt
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring water to a boil. Add the quinoa, reduce heat, and simmer for 15 minutes or until water is absorbed. Let it cool.
  3. 3. In a large mixing bowl, combine the cooled quinoa, chopped kale, cherry tomatoes, cucumber, red onion, and feta cheese.
  4. 4. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour over the salad and toss to combine.
  5. 5. Serve immediately or refrigerate for later.
