Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add minced garlic and sauté until fragrant.
3. Add soaked adzuki beans and enough water to cover them. Bring to a boil.
4. Reduce heat and simmer for 20 minutes or until beans are tender.
5. Add chopped kale, salt, and pepper. Cook for another 10 minutes.
6. Serve hot.
