Ingredients 

Main Ingredients

  • 1 cup Adzuki Beans soaked overnight
  • 1 bunch Kale chopped
  • 1 tablespoon Olive Oil
  • 1 clove Garlic minced
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add minced garlic and sauté until fragrant.
  3. 3. Add soaked adzuki beans and enough water to cover them. Bring to a boil.
  4. 4. Reduce heat and simmer for 20 minutes or until beans are tender.
  5. 5. Add chopped kale, salt, and pepper. Cook for another 10 minutes.
  6. 6. Serve hot.
