Ingredients 

Main Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • cup powdered sugar for dusting
  • 1 cup jelly or jam of your choice

Instructions 

  1. Preheat oven to 375°F (190°C). Grease a 15x10x1-inch baking pan and line with parchment paper.
  2. Beat eggs in a large bowl until thick and lemon-colored. Gradually add sugar, beating until well mixed. Stir in vanilla.
  3. Combine flour, baking powder, and salt; fold into egg mixture. Spread batter evenly in prepared pan.
  4. Bake for 10-12 minutes or until cake springs back when lightly touched. Immediately loosen edges of cake from pan and turn out onto a towel sprinkled with powdered sugar. Carefully peel off parchment paper.
  5. Roll up cake and towel together, starting with the narrow end. Cool on a wire rack.
  6. Unroll cake and spread with jelly. Roll up again without the towel. Sprinkle with additional powdered sugar if desired.
