Ingredients 

Main Ingredients

  • 1 kg Chicken, cut into pieces
  • 2 tablespoon Curry powder
  • 1 teaspoon Allspice
  • 1 teaspoon Thyme
  • 1 unit Onion, chopped
  • 2 cloves Garlic, minced
  • 1 unit Scotch bonnet pepper, chopped
  • 1 cup Coconut milk
  • 2 cups Chicken broth
  • 2 tablespoon Vegetable oil
  • to taste Salt and pepper

Instructions 

  1. 1. Heat the oil in a large pot over medium heat.
  2. 2. Add the chopped onion, garlic, and scotch bonnet pepper. Sauté until the onion is translucent.
  3. 3. Add the curry powder, allspice, and thyme. Cook for another 2 minutes.
  4. 4. Add the chicken pieces and cook until they are browned on all sides.
  5. 5. Pour in the coconut milk and chicken broth. Bring to a boil.
  6. 6. Reduce the heat to low and let it simmer for 30-40 minutes, or until the chicken is cooked through and the sauce has thickened.
  7. 7. Season with salt and pepper to taste. Serve hot.
