Jamaican Brown Stew Chicken

Main Ingredients
- 1 whole Chicken cut into pieces
- 1 large Onion sliced
- 2 cloves Garlic minced
- 1 piece Ginger grated
- 1 large Bell pepper sliced
- 2 tablespoon Soy sauce
- 2 tablespoon Brown sugar
- 1 teaspoon Thyme dried
- 1 teaspoon Allspice ground
- 2 cups Chicken broth
- 2 tablespoon Vegetable oil
1. Season chicken with salt and pepper.
2. Heat oil in a large pot over medium heat. Brown chicken on all sides.
3. Remove chicken and set aside. In the same pot, sauté onions, garlic, ginger, and bell pepper until soft.
4. Add soy sauce, brown sugar, thyme, and allspice. Stir well.
5. Return chicken to the pot. Add chicken broth and bring to a boil.
6. Reduce heat and simmer for 45 minutes, until chicken is tender and sauce thickens.
