Italian Rice Pie
This is a traditional Italian dessert made with rice, ricotta cheese, and a hint of citrus.

- 1 cup rice uncooked
- 4 cups milk
- 1 cup sugar
- 1 cup ricotta cheese
- 3 eggs beaten
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1 teaspoon orange zest
- 1 pinch salt
Preheat your oven to 350°F (175°C).
In a saucepan, cook the rice in milk over medium heat until the rice is tender and the mixture is thick, about 25 minutes. Stir frequently to prevent sticking.
Remove from heat and let it cool slightly.
In a large mixing bowl, combine the cooked rice mixture, sugar, ricotta cheese, beaten eggs, vanilla extract, lemon zest, orange zest, and a pinch of salt. Mix well.
Pour the mixture into a greased pie dish.
Bake in the preheated oven for about 60 minutes, or until the pie is set and the top is golden brown.
Let the pie cool completely before serving. It can be served at room temperature or chilled.
