Ingredients

  • 1 cup Sugar
  • ¼ cup Water
  • 4 large Egg whites room temperature
  • 1 pound Unsalted butter room temperature, cut into pieces
  • 1 teaspoon Vanilla extract

Instructions 

  1. In a saucepan, combine sugar and water. Heat over medium heat until sugar dissolves and mixture reaches 240°F (115°C).
  2. While the sugar syrup is heating, beat egg whites in a stand mixer until soft peaks form.
  3. Once the syrup reaches 240°F, slowly pour it into the egg whites while the mixer is on low speed. Increase speed to high and beat until the mixture is cool and glossy.
  4. With the mixer on medium speed, add butter a few pieces at a time, beating well after each addition. Add vanilla extract and beat until smooth.
