  • 6 large eggs
  • ½ cup grated Parmesan cheese
  • ¼ cup milk
  • 1 cup cherry tomatoes, halved
  • ½ cup chopped spinach
  • ¼ cup chopped basil
  • to taste Salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together eggs, Parmesan cheese, milk, salt, and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add cherry tomatoes and spinach, cook until spinach is wilted.
  5. Pour egg mixture into the skillet and cook until edges start to set.
  6. Transfer skillet to the oven and bake for 10-15 minutes, until the frittata is fully set.
  7. Garnish with chopped basil before serving.
