- ¼ cup butter, softened
- 4 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 2 ½ cups sweetened shredded coconut
- 2 tablespoons ground cinnamon
In a mixing bowl, beat the butter and cream cheese until smooth.
Add the vanilla extract and mix well.
Gradually add the powdered sugar, beating until combined.
Stir in the shredded coconut.
Roll the mixture into small potato-shaped balls.
Roll each ball in ground cinnamon to coat.
Chill in the refrigerator for about 1 hour before serving.
