Ingredients 

Crust

  • 1.5 cups Graham cracker crumbs
  • ¼ cup Sugar
  • ½ cup Butter, melted

Filling

  • 24 oz Cream cheese, softened
  • 1 cup Sugar
  • 3 large Eggs
  • 1 cup Sour cream
  • ¼ cup Irish cream liqueur

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in sour cream and Irish cream liqueur.
  4. Pour filling over crust. Bake in preheated oven for 60 minutes. Turn off oven and let cheesecake cool in oven with door slightly open for 1 hour. Refrigerate for at least 4 hours before serving.
