Ingredients 

Main Ingredients

  • 2 lbs Venison roast
  • 1 large Onion sliced
  • 4 cloves Garlic minced
  • 4 cups Beef broth
  • 1 cup Red wine
  • 2 tablespoon Tomato paste
  • 2 tablespoon Olive oil
  • 2 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 large Carrots cut into chunks
  • 4 large Potatoes cut into chunks

Instructions 

  1. 1. Set the Instant Pot to sauté mode and heat the olive oil.
  2. 2. Sear the venison roast on all sides until browned.
  3. 3. Remove the roast and set aside.
  4. 4. Add the onion and garlic to the pot, sauté until softened.
  5. 5. Stir in the tomato paste, beef broth, and red wine.
  6. 6. Return the roast to the pot, add salt and pepper.
  7. 7. Lock the lid, set to high pressure for 60 minutes.
  8. 8. Allow natural release for 10 minutes, then quick release.
  9. 9. Add carrots and potatoes, cook on high pressure for 10 more minutes.
  10. 10. Quick release, then serve hot.
