Instant Pot Chicken Cacciatore
A quick and easy chicken cacciatore made in the Instant Pot.

Main Ingredients
- 4 pieces Chicken Thighs bone-in, skinless
- 1 medium Onion sliced
- 2 cloves Garlic minced
- 1 cup Bell Peppers sliced
- 1 cup Mushrooms sliced
- 1 can Diced Tomatoes 14.5 oz
- ½ cup Chicken Broth
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
1. Set the Instant Pot to sauté mode. Add a bit of oil and brown the chicken thighs on both sides. Remove and set aside.
2. Add the sliced onion, garlic, bell peppers, and mushrooms to the pot. Sauté until softened.
3. Pour in the diced tomatoes and chicken broth. Stir in the oregano, basil, salt, and pepper.
4. Return the chicken thighs to the pot. Close the lid and set the Instant Pot to manual high pressure for 10 minutes.
5. Once the cooking time is up, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
6. Serve the chicken cacciatore over pasta, rice, or with crusty bread.
