Huevos Rancheros
A classic Mexican breakfast dish featuring eggs, tortillas, and a flavorful tomato sauce.

Main Ingredients
- 2 Eggs
- 2 Corn Tortillas
- 1 cup Tomato Sauce
- ¼ cup Chopped Onion
- 1 clove Garlic, minced
- 1 Jalapeño, chopped
- 1 tablespoon Olive Oil
- to taste Salt and Pepper
- ¼ cup Chopped Cilantro for garnish
Heat olive oil in a skillet over medium heat. Add chopped onion, garlic, and jalapeño. Sauté until softened.
Add tomato sauce to the skillet. Season with salt and pepper. Simmer for 10 minutes.
In another skillet, heat tortillas until slightly crispy. Set aside.
Fry eggs in the same skillet to your preferred doneness.
Place tortillas on plates, top with tomato sauce, and place fried eggs on top. Garnish with chopped cilantro.
