Hearty Lentil Stew

Main Ingredients
- 1 cup lentils rinsed
- 1 tablespoon olive oil
- 1 onion chopped
- 2 cloves garlic minced
- 2 stalks celery chopped
- 1 can diced tomatoes (14.5 oz)
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper
- 1 cup spinach fresh, chopped
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
3. Stir in the lentils, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper.
4. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until lentils are tender.
5. Stir in the spinach and cook for another 5 minutes.
6. Adjust seasoning if needed and serve hot.
