Ingredients 

Main Ingredients

  • 1 cup lentils rinsed
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 stalks celery chopped
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 cup spinach fresh, chopped

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onion, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. 3. Stir in the lentils, diced tomatoes, vegetable broth, cumin, paprika, salt, and pepper.
  4. 4. Bring to a boil, then reduce heat and simmer for 30-35 minutes, or until lentils are tender.
  5. 5. Stir in the spinach and cook for another 5 minutes.
  6. 6. Adjust seasoning if needed and serve hot.
