Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 cup Corn kernels
  • 1 cup Black beans, cooked
  • 4 cups Vegetable broth
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 cup Diced tomatoes
  • 1 Avocado, sliced for garnish
  • 1 Lime, cut into wedges for garnish
  • 1 handful Cilantro, chopped for garnish

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Stir in the chopped red bell pepper, corn, and black beans. Cook for 5 minutes.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  6. Add the ground cumin, chili powder, and diced tomatoes. Simmer for another 10 minutes.
  7. Serve hot, garnished with avocado slices, lime wedges, and chopped cilantro.
