  • 2 cups Bell Peppers (sliced)
  • 1 cup Zucchini (sliced)
  • 1 cup Red Onion (sliced)
  • 2 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 8 pieces Taco Shells

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. In a mixing bowl, toss the bell peppers, zucchini, and red onion with olive oil, cumin, chili powder, salt, and black pepper.
  3. 3. Grill the vegetables for about 10 minutes, turning occasionally, until they are tender and slightly charred.
  4. 4. Warm the taco shells on the grill for about 1 minute on each side.
  5. 5. Fill the taco shells with the grilled vegetables and serve immediately.
