  • 1 Pineapple peeled, cored, and cut into rings
  • 1 Red Bell Pepper diced
  • ½ Red Onion diced
  • 1 Jalapeño seeded and minced
  • ¼ cup Cilantro chopped
  • 1 Lime juiced
  • ½ teaspoon Salt

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Grill pineapple rings for 2-3 minutes on each side until grill marks appear.
  3. 3. Remove pineapple from grill and let cool. Dice into small pieces.
  4. 4. In a mixing bowl, combine diced pineapple, red bell pepper, red onion, jalapeño, cilantro, lime juice, and salt.
  5. 5. Mix well and serve immediately or refrigerate for later use.
