Grilled Eggplant Parmesan
A delicious and healthier take on the classic Eggplant Parmesan, using grilled eggplant slices.

Main Ingredients
- 2 large eggplants sliced into ½ inch rounds
- 1 cup marinara sauce
- 2 cups mozzarella cheese shredded
- ½ cup Parmesan cheese grated
- 2 tablespoon olive oil
- to taste salt
- to taste black pepper
- ¼ cup fresh basil chopped
Preheat your grill to medium-high heat.
Brush the eggplant slices with olive oil and season with salt and pepper.
Grill the eggplant slices for about 3-4 minutes on each side until tender and grill marks appear.
Preheat your oven to 375°F (190°C).
In a baking dish, spread a thin layer of marinara sauce.
Layer the grilled eggplant slices over the sauce.
Top with more marinara sauce, mozzarella cheese, and Parmesan cheese.
Repeat the layers until all ingredients are used, finishing with a layer of cheese on top.
Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden brown.
Garnish with fresh basil before serving.
