Ingredients

  • 4 pieces Chicken Breasts
  • 1 cup Strawberries diced
  • 1 piece Jalapeno seeded and minced
  • 0.25 cup Red Onion diced
  • 2 tablespoons Cilantro chopped
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 teaspoon Salt divided
  • 0.5 teaspoon Black Pepper divided

Instructions 

  1. 1. Preheat your grill to medium-high heat.
  2. 2. Season the chicken breasts with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper.
  3. 3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked.
  4. 4. While the chicken is grilling, combine the strawberries, jalapeno, red onion, cilantro, lime juice, and the remaining salt and pepper in a mixing bowl to make the salsa.
  5. 5. Once the chicken is done, let it rest for a few minutes before serving.
  6. 6. Serve the grilled chicken with a generous scoop of strawberry salsa on top.
