Ingredients

  • 2 pieces Chicken Breasts boneless, skinless
  • 2 pieces Avocados ripe, sliced
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cucumber sliced
  • 1 cup Mixed Greens
  • ¼ cup Red Onion thinly sliced
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the chicken breasts with salt and black pepper.
  3. 3. Grill the chicken for about 5-7 minutes on each side, or until fully cooked.
  4. 4. Let the chicken rest for a few minutes, then slice it.
  5. 5. In a mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and avocado.
  6. 6. Add the sliced chicken to the bowl.
  7. 7. Drizzle olive oil and lemon juice over the salad. Toss to combine.
  8. 8. Season with additional salt and pepper to taste. Serve immediately.
