Main Ingredients
- 1 cup Orzo
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- ½ cup Red onion, finely chopped
- ½ cup Kalamata olives, pitted and sliced
- ½ cup Feta cheese, crumbled
Dressing
- ¼ cup Olive oil
- 2 tablespoon Red wine vinegar
- 1 teaspoon Dried oregano
- 1 clove Garlic, minced
- to taste Salt and pepper
1. Cook orzo according to package instructions. Drain and rinse with cold water.
2. In a large mixing bowl, combine cooked orzo, cherry tomatoes, cucumber, red onion, olives, and feta.
3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, garlic, salt, and pepper.
4. Pour dressing over the salad and toss to combine.
5. Chill in the refrigerator for at least 30 minutes before serving.
