Ingredients 

Cake Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 can crushed pineapple with juice 20 oz can
  • 2 large eggs

Topping Ingredients

  • 1 cup brown sugar
  • 1 cup chopped pecans

Icing Ingredients

  • 1 cup evaporated milk
  • ½ cup butter 1 stick
  • 1 cup sugar
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, sugar, brown sugar, and baking soda.
  3. Add vanilla extract, crushed pineapple with juice, and eggs. Mix until well combined.
  4. Pour batter into a greased 9x13 inch baking pan.
  5. Sprinkle brown sugar and chopped pecans evenly over the batter.
  6. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  7. In a saucepan, combine evaporated milk, butter, sugar, and vanilla extract. Bring to a boil and cook for 2-3 minutes, stirring constantly.
  8. Pour the hot icing over the cake as soon as it comes out of the oven. Let the cake cool before serving.
