Cake Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1 cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 can crushed pineapple with juice 20 oz can
- 2 large eggs
Topping Ingredients
- 1 cup brown sugar
- 1 cup chopped pecans
Icing Ingredients
- 1 cup evaporated milk
- ½ cup butter 1 stick
- 1 cup sugar
- 1 teaspoon vanilla extract
Preheat oven to 350°F (175°C).
In a large mixing bowl, combine flour, sugar, brown sugar, and baking soda.
Add vanilla extract, crushed pineapple with juice, and eggs. Mix until well combined.
Pour batter into a greased 9x13 inch baking pan.
Sprinkle brown sugar and chopped pecans evenly over the batter.
Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
In a saucepan, combine evaporated milk, butter, sugar, and vanilla extract. Bring to a boil and cook for 2-3 minutes, stirring constantly.
Pour the hot icing over the cake as soon as it comes out of the oven. Let the cake cool before serving.
