Ingredients 

Pie Filling

  • 4 cups gooseberries fresh or frozen
  • 1 cup sugar
  • 2 tablespoon cornstarch
  • 1 tablespoon lemon juice fresh

Pie Crust

  • 2 pie crusts store-bought or homemade

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine gooseberries, sugar, cornstarch, and lemon juice. Mix well.
  3. Place one pie crust in the pie dish. Pour the gooseberry mixture into the crust.
  4. Cover with the second pie crust. Seal and crimp the edges. Cut a few slits on top to allow steam to escape.
  5. Bake for 45 minutes or until the crust is golden brown and the filling is bubbling.
  6. Let the pie cool before serving.
