Ginger Carrot Soup Recipe
A warm, comforting soup with the zing of ginger and sweetness of carrots.

Main Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 lb carrots, peeled and chopped
- 4 cups vegetable broth
- 1 cup coconut milk
- to taste salt and pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent.
Add garlic and ginger, cook for another minute.
Add carrots and vegetable broth. Bring to a boil, then simmer until carrots are tender.
Blend the soup until smooth. Return to pot and stir in coconut milk. Season with salt and pepper.
