Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 lb carrots, peeled and chopped
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • to taste salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add garlic and ginger, cook for another minute.
  4. Add carrots and vegetable broth. Bring to a boil, then simmer until carrots are tender.
  5. Blend the soup until smooth. Return to pot and stir in coconut milk. Season with salt and pepper.
