Gazpacho Recipe
A refreshing cold Spanish soup made with tomatoes, cucumbers, peppers, and onions.

Main Ingredients
- 6 cups ripe tomatoes, chopped
- 1 cup cucumber, peeled and chopped
- 1 cup green bell pepper, chopped
- ½ cup red onion, chopped
- 2 cloves garlic, minced
- 3 tablespoon red wine vinegar
- ¼ cup extra virgin olive oil
- 2 cups cold water
- to taste salt and pepper
1. Combine tomatoes, cucumber, bell pepper, onion, and garlic in a blender.
2. Blend until smooth.
3. Add vinegar, olive oil, and cold water. Blend again.
4. Season with salt and pepper to taste. Chill before serving.
