  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 4 cups kale chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions 

  1. 1. In a saucepan, bring the water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed.
  2. 2. In a frying pan, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant.
  3. 3. Add the chopped kale to the frying pan and cook for about 5 minutes until wilted.
  4. 4. Combine the cooked quinoa with the kale and garlic mixture. Season with salt and black pepper. Serve warm.
