  • 400 g fusilli pasta
  • 200 g fresh spinach
  • 250 g ricotta cheese
  • 2 cloves garlic minced
  • 2 tablespoon olive oil
  • to taste salt
  • to taste black pepper freshly ground
  • 50 g Parmesan cheese grated

Instructions 

  1. 1. Cook the fusilli pasta according to the package instructions. Drain and set aside.
  2. 2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
  3. 3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes.
  4. 4. Reduce the heat to low and stir in the ricotta cheese. Cook until the cheese is warmed through.
  5. 5. Add the cooked fusilli pasta to the skillet and toss to combine. Season with salt and freshly ground black pepper to taste.
  6. 6. Serve the pasta topped with grated Parmesan cheese.
