Ingredients 

Main Ingredients

  • 2 cups mixed dried fruit
  • 1 cup chopped nuts
  • 1 cup brown sugar
  • 1 cup butter softened
  • 4 eggs large
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup orange juice

Instructions 

  1. Preheat your oven to 325°F (165°C).
  2. In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In another bowl, combine the flour, baking powder, cinnamon, and nutmeg. Gradually add to the creamed mixture, mixing until just combined.
  5. Stir in the dried fruit, nuts, and orange juice.
  6. Pour the batter into a greased and floured baking pan.
  7. Bake for 90 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
