Ingredients 

Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter cold and cubed
  • ¼ cup sugar
  • 1 egg yolk
  • 2 tablespoon cold water

Filling

  • 1 cup heavy cream
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • 2 egg yolks

Topping

  • 2 cups mixed fresh fruit sliced

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and sugar. Cut in butter until mixture resembles coarse crumbs. Add egg yolk and cold water, mix until dough forms.
  3. Press dough into tart pan. Bake for 20 minutes or until golden brown. Let cool.
  4. In another bowl, whisk together cream, sugar, vanilla, and egg yolks. Pour into cooled crust.
  5. Top with fresh fruit. Chill for at least 1 hour before serving.
