Ingredients

  • 1 cup Butter softened
  • 1 cup Sugar
  • 4 Eggs
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 cup Mixed Dried Fruits
  • 1 teaspoon Vanilla Extract

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Sift the flour and baking powder together, then fold into the butter mixture.
  5. Stir in the mixed dried fruits and vanilla extract.
  6. Pour the batter into a greased and floured baking pan.
  7. Bake for 90 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
