Ingredients 

Main Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • 6 large egg yolks
  • 1 tablespoon vanilla extract

Instructions 

  1. In a saucepan, combine the heavy cream, whole milk, and half of the sugar. Heat over medium heat until it begins to steam, but do not let it boil.
  2. In a separate bowl, whisk together the egg yolks and the remaining sugar until the mixture is pale and thick.
  3. Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from cooking.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
  5. Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate until completely chilled.
  6. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. Transfer to a container and freeze until firm.
