  • 6 eggs
  • ½ cup milk
  • 1 cup shredded cheese cheddar or your choice
  • 1 bell pepper diced
  • 1 onion diced
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk together the eggs and milk. Season with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add the diced onion and bell pepper, and cook until softened.
  4. Pour the egg mixture into the skillet. Sprinkle the shredded cheese on top.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set.
  6. Remove from the oven and let it cool slightly before slicing and serving.
