Ingredients 

Pie Crust

  • 1 Pre-baked pie crust

Filling

  • 1 cup Sugar
  • 3 tablespoon Cornstarch
  • 1 cup Water
  • 4 cups Fresh strawberries, hulled and halved
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract

Instructions 

  1. 1. In a saucepan, combine sugar, cornstarch, and water. Cook over medium heat, stirring constantly until thickened and clear.
  2. 2. Remove from heat and stir in lemon juice and vanilla extract. Let it cool to room temperature.
  3. 3. Arrange strawberries in the pre-baked pie crust.
  4. 4. Pour the cooled mixture over the strawberries. Chill in the refrigerator for at least 2 hours before serving.
