Ingredients 

Main Ingredients

  • 1 cup Sugar
  • ½ cup Fresh lime juice about 4-5 limes
  • 2 tablespoon Lime zest from about 4-5 limes
  • 4 Egg yolks
  • ½ cup Butter cut into pieces

Instructions 

  1. In a saucepan, combine sugar, lime juice, and lime zest.
  2. Whisk in egg yolks until smooth.
  3. Cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon, about 10 minutes.
  4. Remove from heat and stir in butter until melted and smooth.
  5. Strain the curd through a fine-mesh strainer into a bowl to remove zest and any cooked egg bits.
  6. Let cool, then refrigerate until ready to use.
