Instructions
In a saucepan, combine sugar, lime juice, and lime zest.
Whisk in egg yolks until smooth.
Cook over medium heat, stirring constantly, until mixture thickens and coats the back of a spoon, about 10 minutes.
Remove from heat and stir in butter until melted and smooth.
Strain the curd through a fine-mesh strainer into a bowl to remove zest and any cooked egg bits.
Let cool, then refrigerate until ready to use.
