  • 6 cups fresh apricots, pitted and sliced
  • 1 cup sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup butter, melted

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the apricots and ½ cup of sugar. Let it sit for 10 minutes.
  3. In another bowl, mix the flour, baking powder, salt, and remaining sugar.
  4. Add milk and melted butter to the dry ingredients and stir until smooth.
  5. Pour the batter into a greased baking dish. Spoon the apricot mixture over the batter.
  6. Bake for 40 minutes or until golden brown. Serve warm.
