Ingredients

  • 1 cup All-purpose flour
  • ½ cup Sugar
  • ½ cup Butter melted
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • ½ teaspoon Baking powder
  • ¼ teaspoon Salt

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a muffin tin.
  2. In a mixing bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat the eggs and sugar until light and fluffy. Add melted butter and vanilla extract, and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  6. Bake for 15 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the tin for a few minutes before transferring to a wire rack to cool completely.
