Flapper Pie Recipe

Ingredients 

Crust

  • 1 ½ cups Graham cracker crumbs
  • ¼ cup Sugar
  • ½ cup Butter, melted

Filling

  • 2 ½ cups Milk
  • ½ cup Sugar
  • ¼ cup Cornstarch
  • 3 Egg yolks beaten
  • 1 teaspoon Vanilla extract

Meringue

  • 3 Egg whites
  • ¼ teaspoon Cream of tartar
  • ¼ cup Sugar

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into a pie dish to form the crust.
  3. Bake the crust for 10 minutes. Let it cool.
  4. In a saucepan, heat milk until it's hot but not boiling.
  5. In a bowl, mix sugar and cornstarch. Gradually add the hot milk, stirring constantly.
  6. Return the mixture to the saucepan and cook until thickened.
  7. Stir a small amount of the hot mixture into the beaten egg yolks, then return to the saucepan. Cook for another 2 minutes.
  8. Remove from heat and add vanilla extract. Pour the filling into the cooled crust.
  9. In a bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff peaks form.
  10. Spread the meringue over the filling, sealing the edges.
  11. Bake for 10-15 minutes, until the meringue is golden brown.
  12. Cool before serving.
