Ingredients

  • 1 cup sugar for caramel
  • 1 can sweetened condensed milk
  • 1 can evaporated milk
  • 4 eggs
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan over medium heat, melt the sugar until it turns into a golden caramel. Pour into a baking dish and set aside.
  3. In a blender, combine sweetened condensed milk, evaporated milk, eggs, coconut milk, and vanilla extract. Blend until smooth.
  4. Pour the mixture over the caramel in the baking dish.
  5. Place the baking dish in a larger pan filled with hot water. Bake for 60 minutes or until set.
  6. Let cool, then refrigerate for at least 4 hours before serving.
