Ingredients

  • 2 lbs Fresh figs stems removed
  • 2 cups Granulated sugar
  • 1 tablespoon Lemon juice freshly squeezed
  • 1 teaspoon Lemon zest

Instructions 

  1. 1. In a large saucepan, combine the figs, sugar, lemon juice, and lemon zest.
  2. 2. Cook over medium heat, stirring frequently, until the sugar dissolves and the mixture comes to a boil.
  3. 3. Reduce heat to low and simmer for about 45 minutes, stirring occasionally, until the mixture thickens.
  4. 4. Remove from heat and let cool slightly before transferring to sterilized jars.
  5. 5. Seal jars and store in the refrigerator.
