Ingredients 

Main Ingredients

  • 110 g Butter softened
  • 110 g Caster Sugar
  • 2 Eggs large
  • 110 g Self-Raising Flour sifted
  • 1 teaspoon Vanilla Extract
  • 1-2 tablespoon Milk

Instructions 

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. Cream the butter and sugar together in a mixing bowl until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Fold in the flour, adding a little milk if the mixture is too stiff.
  5. Spoon the mixture into the cupcake liners, filling each about two-thirds full.
  6. Bake for 15-20 minutes or until golden brown and a skewer inserted into the center comes out clean.
  7. Allow to cool on a wire rack before serving.
