Ingredients

  • 1.5 kg Beef Roast preferably rib or sirloin
  • 2 tablespoon Olive Oil
  • to taste Salt
  • to taste Black Pepper freshly ground
  • 4 cloves Garlic sliced
  • 2 sprigs Rosemary fresh

Instructions 

  1. Preheat your oven to 220°C (425°F).
  2. Rub the beef roast with olive oil, salt, and black pepper.
  3. Place the garlic slices and rosemary sprigs on top of the roast.
  4. Put the roast in a roasting pan and place it in the oven.
  5. Roast for 15 minutes at 220°C (425°F), then reduce the temperature to 180°C (350°F) and continue roasting for 75 minutes.
  6. Check the internal temperature with a meat thermometer. It should read 55°C (130°F) for medium-rare.
  7. Remove from the oven and let it rest for 15 minutes before carving.
