Ingredients 

Main Ingredients

  • 8 pieces Corn tortillas
  • 2 cups Cooked shredded chicken
  • 1 cup Sour cream
  • 2 cups Shredded cheese Monterey Jack or similar
  • 1 cup Green tomatillo sauce
  • 1 cup Chopped cilantro For garnish

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. Blend the tomatillo sauce and sour cream until smooth.
  3. Spread a thin layer of the sauce on the bottom of a baking dish.
  4. Fill each tortilla with shredded chicken and roll them up. Place them seam-side down in the baking dish.
  5. Pour the remaining sauce over the enchiladas and sprinkle with shredded cheese.
  6. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Garnish with chopped cilantro and serve hot.
