Ingredients

Pie Crust

  • 2 cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • ¼ cup ice water

Filling

  • 4 cups elderberries fresh or frozen
  • 1 cup sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice freshly squeezed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and butter until the mixture resembles coarse crumbs.
  3. Gradually add ice water, mixing until the dough comes together. Divide the dough in half, shape into discs, and refrigerate for 30 minutes.
  4. Roll out one disc of dough and fit it into a pie dish. Set aside.
  5. In a large bowl, mix elderberries, sugar, cornstarch, and lemon juice. Pour the mixture into the pie crust.
  6. Roll out the second disc of dough and place it over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
  7. Bake for 50 minutes or until the crust is golden brown and the filling is bubbly. Let cool before serving.
