Ingredients 

Main Ingredients

  • 1 large Eggplant diced
  • 2 tablespoon Olive Oil
  • 3 cloves Garlic minced
  • 1 can Diced Tomatoes
  • 1 lb Pasta
  • to taste Salt
  • to taste Black Pepper
  • ¼ cup Basil chopped

Instructions 

  1. 1. Cook pasta according to package instructions.
  2. 2. Heat olive oil in a skillet over medium heat. Add diced eggplant and cook until softened.
  3. 3. Add minced garlic to the skillet and cook for another minute.
  4. 4. Stir in diced tomatoes and let simmer for 10 minutes.
  5. 5. Drain the pasta and add it to the skillet. Mix well.
  6. 6. Season with salt and black pepper to taste. Garnish with chopped basil before serving.
