Ingredients 

Main Ingredients

  • 2 large eggplants sliced into ¼ inch rounds
  • 2 cups breadcrumbs Italian seasoned
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 large eggs beaten
  • 1 cup all-purpose flour
  • 1 cup olive oil for frying

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Set up a breading station with flour, beaten eggs, and breadcrumbs mixed with Parmesan cheese.
  3. Dredge eggplant slices in flour, dip in eggs, and coat with breadcrumb mixture.
  4. Heat olive oil in a frying pan and fry eggplant slices until golden brown. Drain on paper towels.
  5. In a baking dish, layer fried eggplant, marinara sauce, and mozzarella cheese. Repeat layers.
  6. Bake in preheated oven for 20-25 minutes until cheese is melted and bubbly.
  7. Let cool for a few minutes before serving.
