Ingredients 

Main Ingredients

  • 1 whole Chicken about 4-5 pounds
  • 2 tablespoon Kosher Salt
  • 1 teaspoon Black Pepper freshly ground
  • 1 tablespoon Olive Oil

Instructions 

  1. 1. Pat the chicken dry with paper towels.
  2. 2. Rub the chicken all over with kosher salt, including inside the cavity.
  3. 3. Place the chicken on a wire rack set over a baking sheet and refrigerate, uncovered, for at least 24 hours.
  4. 4. Preheat your oven to 425°F (220°C).
  5. 5. Rub the chicken with olive oil and sprinkle with black pepper.
  6. 6. Place the chicken breast-side up on a roasting pan and roast for about 1.5 hours, or until the internal temperature reaches 165°F (75°C).
  7. 7. Let the chicken rest for 15 minutes before carving.
