Ingredients 

Date Filling

  • 2 cups dates, chopped
  • 1 cup water
  • 1 teaspoon vanilla extract

Oat Crust

  • 1 ½ cups rolled oats
  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar, packed
  • ½ teaspoon baking soda
  • 1 cup butter, softened

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a saucepan, combine chopped dates and water. Cook over medium heat, stirring occasionally, until the dates are soft and the mixture is thickened. Remove from heat and stir in vanilla extract. Set aside to cool.
  3. In a mixing bowl, combine rolled oats, flour, brown sugar, and baking soda. Add softened butter and mix until crumbly.
  4. Press half of the oat mixture into the prepared baking pan. Spread the date mixture evenly over the crust. Sprinkle the remaining oat mixture on top and press down lightly.
  5. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown. Allow to cool before cutting into squares.
