Main Ingredients
- 1 cup dates, chopped
- 1 cup boiling water
- 1 teaspoon baking soda
- ½ cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
Preheat your oven to 350°F (175°C).
In a bowl, combine chopped dates, boiling water, and baking soda. Let it sit for 10 minutes.
In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Gradually add flour, baking powder, and salt to the butter mixture. Mix until just combined.
Fold in the date mixture. Pour batter into a greased baking pan.
Bake for 40 minutes or until a toothpick inserted into the center comes out clean. Let it cool before serving.
